Eat Fresh: Herby Rocket Salad Recipe

If there’s one thing you’ll always find on my plate, it’s fresh, leafy greens. Not only do they have a range of health benefits, they’re great for skin, too. Here’s one of my favourite five-minute salads to add to any meal.

Spring cleaning is not just for your house. After a long winter season, your skin may be needing a reset, too. At this time of year I like to pack my diet with lots of fresh, leafy greens to give my skin and overall health a boost, which means that salads are well and truly on the menu. Greens are a good source of age-fighting phytochemicals, so what you put on your plate is just as important as what you apply to your face when it comes to your anti-ageing regime. Rocket is one of the tastiest ways to add a green boost to your meal, so I thought I’d share one of my favourite rocket recipes from my book Eat Beautiful to get you set for spring.

Is rocket good for skin?

Rocket, also known as arugula, is rich in vitamins A, C, and K, promoting eye health, immunity, bone strength and healthy skin function. Its antioxidants help combat inflammation, which is also good for maintaining good skin health.

Why are leafy greens good for skin?

Leafy greens like rocket are excellent for skin due to their high vitamin content, aiding in collagen production for skin elasticity and repair. They also contain antioxidants that protect against UV damage and promote a healthy complexion.

What are the health benefits of herbs like parsley, mint and coriander?

Herbs like parsley, mint, and coriander are packed with vitamins, minerals, and antioxidants. They aid digestion, reduce inflammation, and support heart health. Parsley is rich in vitamin K, mint can soothe indigestion, and coriander may help lower blood sugar levels. Adding herbs to your leafy salad can boost the nutritional value of your meal.

Herby Rocket Salad Recipe

INGREDIENTS

4 handfuls of rocket
Handful of baby spinach
Small handful of fresh parsley
Small handful of fresh coriander
Small handful of fresh mint
1 tbsp sunflower seeds
20g Parmesan cheese, shaved
1 tbsp extra-virgin olive oil
1 tsp balsamic vinegar

Serves 2 as a side dish
150 calories per serving

  • Throw all the green leaves and herbs into a bowl and toss to combine.
  • To serve, sprinkle with the sunflower seeds and Parmesan shavings and dress with the olive oil and balsamic vinegar.
