From time to time, the body craves something sweet – usually when your energy levels are low and you feel tired. By mid-September things are already super busy for me after the August break, and coming into Fashion Week, I like to have some Date Energy Bites made from my recipe in Eat Beautiful ready on hand as a healthy alternative for whenever I need a quick pick me up.

Dates come into season in Autumn and they make a great natural alternative to refined sugar. My Date Energy Bites are so quick and easy to make and they taste amazing too – they still feel like an indulgent treat!

Date energy bites

Makes 10
160 calories per ball

120g pitted dates
120g dried apple rings
120g unsalted dry-roasted almonds
120g gluten-free rolled oats
1 tbsp maple syrup
1 tsp ground cinnamon
Handful of pistachios, finely chopped

  1. Cover the dates in hot water and leave to soak for 10 minutes to soften. Drain and squeeze out any water.
  2. Place in a food processor with all the remaining ingredients except the pistachios, add 1 tablespoon of water and blend until the mixture turns into a paste with a sticky, dough-like consistency. Add another tablespoon of water to loosen further, if needed.
  3. Scoop out tablespoons of the mixture and, between clean, wet hands, roll into ten balls. Tip the pistachios into a bowl and roll each ball in the nuts to coat.
  4. Store in an airtight container in the fridge of freezer.
